This apple french toast bake is a perfect recipe to share with guests. It is a cross between an egg bake, apple pie filling, French toast, and bread pudding. The egg mixture is flavored with maple syrup that complements the filling. Pecans can be added to the dish for crunch and more flavor. And finally, a cream cheese glaze is literally the icing on the bake.

French Toast Bake Ingredients

There are four parts to this recipe–the French toast filling, the egg mixture, chopped pecans, and cream cheese glaze.

Apples: I recommend granny smith apples in this recipe. They hold up well when baked. A few other options you could try would be Honeycrisp apples, Braeburn, or Pink Lady apples.

Bread: I chose to use brioche, a French bread, in this recipe. It is somewhat of a pastry and bread combo that tasted amazing in this recipe! You could also use another sweet bread like Hawaiian bread or even French bread.

Pecans: If you do not want to add nuts, simply leave them out of the recipe. 

Glaze: When making the glaze, make sure the butter, cream cheese, and milk are all at room temperature. Cold ingredients will cause the glaze to clump and separate and not be as smooth.

The first thing to do in this recipe is to get the apple french toast filling made. To do this, peel, core, and dice the apples. After the apples are cubed, melt the butter in a medium saucepan. Add the apples to the melted butter to let them cook for about 5 minutes, or until they are softened.

Next, add the brown sugar and cinnamon. Cook until the sugar has dissolved, and then set this aside to cool. As the apple mixture is cooling, cube the bread and add half of it to a greased 9×13-inch baking dish. Pour half of the apple mixture on top of the bread. Repeat the layers with the other halves of the bread and apple mixture. Set this aside as you prepare the egg mixture.

With the word overnight in the title, I am sure you know that for best results, this apple french toast bake should be refrigerated overnight. Before refrigerating the egg bake, make the egg mixture to add the layers of bread and apples. Simply combine the ingredients of the egg mixture and pour it over the bread and apples. Cover the dish with plastic wrap and refrigerate it overnight.

When ready to bake (meaning the next day), remove the french toast bake from the refrigerator and preheat the oven. Let the egg bake sit at room temperature for about 30 minutes before putting it into the oven. Top the french toast bake with pecans, if adding. Then, cover the dish with aluminum foil. Bake for 40 minutes. Then, remove the foil and bake for an additional 40 minutes. The apple french toast bake is done when the center is no longer jiggly.

How to Make the Glaze

The glaze is a cream cheese glaze that puts the sweetening touch on the overnight apple french toast bake. To make the glaze, be sure to use room-temperature ingredients. In a bowl, mix together the ingredients for the glaze. Start with a tablespoon of milk and add more as needed until the glaze reaches your desired consistency. Do I Have to Refrigerate this Overnight?

For the best results, I recommend letting the apple french toast bake chill in the refrigerator overnight. This gives the egg mixture plenty of time to soak into the bread. However, you could get away with baking this after the dish has been in the refrigerator for as few as 2-3 hours.

Ingredients

French Toast Filling

  • ¼ cup (½ stick, 57g) unsalted butter
  • 5 medium (5 cups) Granny Smith apples, peeled, cored, and diced into ¼-inch cubes
  • 2 tablespoons light brown sugar
  • 1 teaspoon cinnamon
  • 1 loaf (16 ounces) brioche bread, cut into ¼-inch cubes

Egg Mixture

  • 12 large eggs, beaten
  • 2 cups (490g) whole milk
  • cup (105g) maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • ½ teaspoon kosher salt

Topping

  • ½ cup (55g) chopped pecans

Cream Cheese Glaze

  • ¼ cup (½ stick, 57g) unsalted butter, softened
  • 1 ounce cream cheese, softened
  • ½ teaspoon vanilla
  • ¾ cup (94g) confectioners’ sugar
  • 1-3 tablespoons whole milk, room temperature

Instructions

French Toast Filling

  • Spray a 9×13-inch baking dish with nonstick cooking spray. Set aside.
  • In a medium saucepan over medium heat, melt butter. Once melted, add apples and cook until softened (about 5 minutes).
  • Add brown sugar and cinnamon and cook until dissolved (about 2 minutes). Set aside to cool.
  • To the prepared baking dish, add half of the bread. Top with half of the cooled apple mixture. Top with the remaining bread, and end with the rest of the apple mixture.

Egg Mixture

  • In a large bowl combine eggs, milk, maple syrup, vanilla, cinnamon, and salt.
  • Pour egg mixture evenly over the layers of bread and apple mixture. Cover with plastic wrap and refrigerate overnight.
  • When ready, preheat the oven to 350°F.
  • Remove the mixture from the refrigerator and let it rest at room temperature for 30 minutes before baking.
  • Top the mixture with pecans and cover with aluminum foil. Bake for 40 minutes, remove foil, and bake 40 more minutes, or until the center does not jiggle. Remove from the oven and let it cool a bit as you make the glaze.

  • While the apple french toast bake cools, mix together the glaze ingredients in a medium bowl. Start with a tablespoon of milk, adding more until the glaze reaches your desired consistency.
